Have you been enjoying simple pleasures lately?
So far, the theme of this weekend has been just that – letting myself find joy in simple pleasures.
Recognize that orange straw? Yup…it’s DUNKIN’ DONUTS! This wicked healthy girl has been having DD withdrawals ever since the move southward. My BFF Ali took me on a journey to the other side of town where there exists the ONLY DD around and I was jumping for joy/tail wagging/grinning ear to ear to have this wicked good taste of home. Simple pleasure.
On to today. I woke up (a bit earlier than I’d have preferred) to let Dre out and felt…
Crisp, cool, fresh air!!!!!!! YES! I breathed it this refreshing air and let it fill up my lungs and my soul…ahhh. Don’t you just love this? Fall is my favorite season and I couldn’t wait to spend my morning outside relishing in the cooler temps. Simple pleasure.
Dre and I headed out and took a nice stroll around the neighborhood. I listened to music and let my thoughts wander. Are you able to do that? Sometimes, my brain is so busy. It takes a conscious effort sometimes to JUST SAY NO! to brain clutter. After our peaceful, brain-clutter free walk (simple pleasure), I dropped Dre off and set out to run 4 miles.
I’d say that this is the last run for these old sneaks before I kick them into retirement. It’s been real, sneaks…thanks for the miles.
I kept a light pace for the run – my goal was to just be moving and enjoy the weather, not kick my own you-know-what. Simple pleasure. I ran around the park where football season is in full swing! Another gift of fall. The little kids are so cute all geared up – their helmets are bigger than their bodies and they bobble around! I stopped to watch them a couple times and couldn’t help but smile…hopefully I didn’t look like a creeper! Simple pleasure – minus the creeper part.
When I came home, I could hardly wait to eat my favorite breakfast…Baked Banana Berry Oatmeal, lovingly referred to as BBBO. I make this ahead of time and eat it for breakfast at least 3 times a week! Simple pleasure.
Oatmeal is a powerhouse breakfast that can keep you full for hours (no hangriness!) It’s a nutritional force to be reckoned with – crazy good for your health. Eating it is a no brainer! And…it’s so dang good. So, you’d best jump on the oatmeal train if you haven’t already…all aboard!
Mine also goes above and beyond to include juicy berries (hey there, sweet antioxidants!), bananas, flaxseed, egg whites, and almond milk. And of course, I also top it with some PB! The deliciousness and nutritiousness of this breakfast just fills me with wicked healthy joy. It is dairy free and can be GF too if made with GF oats.

Wicked Healthy Banana Berry Baked Oatmeal
Ingredients: Dry – 2 ripe bananas, sliced 2 c oats (not instant!) 4-5 packets stevia 1.5 t baking powder 1.5 t cinnamon 2T flaxseed 1.5 c berries of choice (frozen works) Wet – 1.5 c almond milk 1.5 c water 1 t vanilla 2 egg whites
Directions: preheat oven to 375 and then… 1. put sliced bananas in a single layer lining greased 9×9 baking dish. combine dry ingredients. 2. whisk together wet ingredients, making sure egg whites are fully broken up and distributed. 3. pour dry mixture into wet and mix together. 4. pour half into baking dish. 5. add layer of berries. 6. pour remaining half of mixture on top of berries. 7. top with the rest of the berries.8. bake for an hour or until top begins to brown and a fork comes out clean.
Serve immediately or let cool and then divide into 3-4 portions to enjoy throughout the week. The servings can be reheated in the microwave and are good every time! DO IT!
